Chilli Glazed Pork Chops

Ingredients:
- 2 pork chops (6oz each)
- 1 apple, peeled cored and sliced in into thick wedges
- 1/2 tbsp chipotle sauce
- 1/2 tbsp dijon mustard
-1/2 tbsp honey
- 1/2 tbsp oilve oil
- salt and pepper to taste
- 1/2 cup apple juice
- 1 tbsp butter

Preparation:
1. Mix together the chipolte sauce, mustard and honey. Set aside. Heat oil in a skillet over medium heat. Sprinkle the chops with salt and pepper and cook, un disturbed until a crust forms. Brush the uncooked sides of the chops with the chipotle galze, flip, and brush the cooked sides. add the apple pieces to the pan cook 3 or 4 more minutes.
2. Lower the heat and add the juice. Simmer for 4 to 5 minutes until the chops a re cooked all the way through. Remove them, season the apple mix with more salt and pepper, and add the butter. Pour the apple mix over the pork chops. (Makes 2 servings)
